GLENN R. MACK is a food historian. After seven years in with Time Magazin=

in Moscow and New York, Glenn left journalism for culinary research on th=

Silk Road. His travels took him to all the Central Asian nations, as well=

several trips to Xinjiang, China.

ASELE SURINA is a Russian native and graduated from Moscow State=20
University with
a Master's degree in Journalism. Since 1999 she has worked at the=20
Institute of
Classical Archaeology at the University of Texas, responsible for joint=20
projects
with an archaeological museum in Crimea, Ukraine.
